Our Classic Cranberry Orange Muffins Recipe, BURSTING with Orange Essence & Tart Cranberry in a Buttery Almond Flour Low Carb Muffin. These low carb cranberry orange muffins celebrate the classic flavor combination that is popular around the holidays, but yummy all year long. Cranberry Orange Almond Flour Muffins

Cranberry Orange is a popular combination like peanut butter and jelly or lemon blueberry. I grew up having cranberry orange muffins, bread and scones once the holiday season hit. It is one of those things that reminds me of certain occasions, like Christmas Eve morning at my gramma's house or taking dozens of the muffins to a school holiday fundraiser.

Are Cranberries Keto or Low Carb

Cranberries technically are not a keto approved food. Because they are a dried fruit their sugar content exceeds what is allowed on the keto diet. However, they can be eaten in moderation on a low carb diet if your physician or regimen allows. Which is why the small amount in this muffin recipe has little effect on carb count.

Are Oranges Keto or Low Carb

As with cranberries, technically no. Oranges are not either a keto or low carb approved food. You can however get away with using the peel or oil for flavor. Or as always, orange extract is allowed and there are a variety of sugar free flavored orange products. We used the oil for the orange in these cranberry muffins.

Then How Are These Muffins Low Carb

When I started eating low carb for life I set out to create low carb versions of my favorites, like these almond flour muffins. Now, neither orange or cranberry is technically low carb regardless of the muffin recipe. Instead, we use orange peel which has no glycemic effect, however provides plenty orange oils for flavor. Such a small amount of cranberries are used and chopped to go further. They barely have an effect on the carb count.

Recipe for our Cranberry Orange Muffins

Makes 12 muffins.

Muffin Ingredients

  • 3eggs, beaten
  • 1tsp vanilla extract
  • ½ cup sour cream
  • ⅓ cup sweetener of choice (I use powdered Pyure)
  • 1 tablespoon orange peel, fine chopped
  • 1 teaspoon orange flavor oil
  • 3 cupsalmond flour
  • 2 tsp baking powder
  • ½ tsp nutmeg
  • ¼ tsp salt
  • ⅓ cup driedcranberries, chopped

Instructions

  1. Preheat oven to 350º
  2. In a large mixing bowl with electric mixer- beat eggs, vanilla, sour cream, sweetener, orange peel and orange oil until well combined.
  3. Add remaining ingredients (except cranberries), mix.
  4. Hand stir in cranberries
  5. Spoon into muffin papers or greased muffin tin.
  6. Bake 20 minutes or until top is firm and toothpick inserted in the middle comes out clean. Smother with butter and Enjoy this recipe for low carb muffins, yum!

PLEASE NOTE* Allow the muffins to cool or they will stick to the paper and crumble apart. If you want a warm muffin to smother with butter simply peel the paper off and microwave for a few seconds.
