This is by far the quickest and tastiestrecipe for spaghetti that I've had in a long time, and it's all thanks to fellow food blogger, Trish Rosenquist, and her brand new cookbook: "100 Creative Ways to use Rotisserie Chicken in Everyday Meals."

Since I'm all about taking a fewshortcut liberties when it comes to getting dinner on the table quickly on busy nights, I'm thrilled to have Trish's wonderful new cookbook to refer towhen it comes to usingmy favorite grocery store shortcut: the rotisserie chicken.

With the following chapters included in her book: Casseroles, Bakes and More; 5 Ingredient Or Less; 20-Minute Dinners; Handheld Favorites; Slow Cooker Creations; Comfort Foods; Savory Sandwiches; Sensational Salads, and Slurpable Soups, Trish has got you covered when it comes to delicious family favorite meals that will win rave reviews, and soon become some of your most requested dishes.

Because I knew that I'd want leftovers of this French Spaghetti for my husband and kids to eat during the week for lunch, the only thing I did differently from Trish's original recipe was that I increased the ingredient quantities slightly, and instead of using Burgundy wine, I used some Pinot Noir that I'd already had.

Notes

If you'd like to make a vegetarian version of this recipe, omit the rotisserie chicken from the sauce. You'll still enjoy the slow-cooked flavor of the sauce and spaghetti together thanks to the herbs, wine, and of course, butter.

Do you leave water boiling when cooking pasta? ›

Cover your pan with a lid to help bring the water up to the boil more quickly, then remove the lid once the water is boiling or reduce the temperature slightly to stop it bubbling over. Add the pasta to the water once it's boiling, never before, and cook without the lid.

Do you start pasta in cold or boiling water? ›

Cold-Start Pasta Is Faster and Uses Less Water

In our tests, 1 pound of dried pasta started in 1 quart of cold water cooked up just as nicely al dente as the same type of pasta started in 4 quarts of boiling water (our conventional method).

Do I boil water before adding pasta? ›

Adding the pasta to water that isn't boiling will actually increase your overall cook time and cause your pasta to sit in the water longer. You will end up with pasta that has absorbed too much water with a mushy texture. Be patient and wait for a rapid boil; it'll pay off.

How many people will 1 lb of spaghetti feed? ›

Most recipes call for one pound of pasta — which is a standard box or bag — to serve four to six people. It's far easier to eyeball this than fuss over specific measurements. I find that half the box, or a half-pound (eight ounces) of pasta, serves two to three people, depending on sauce and hunger level.

How do you cook spaghetti for a large crowd? ›

Cook your pasta ahead of time, in a very large pot, with a lot of salt in the water, not oil. You can make your pasta up to a full day in advance. Make sure your pot is large enough to hold the full amount of water called for in the instructions on the box (for whatever quantity you intend on making).

Should you mix spaghetti with sauce? ›

First, in authentic Italian cuisine, the sauce is always tossed with the pasta before it ever hits the plate. Just before the sauce is done cooking, the hot pasta is added to the saucepan. Generally speaking, we recommend cooking the pasta in the sauce together for about 1-2 minutes.

How do Italians serve spaghetti? ›

The standard Italian place setting has two plates, a flat one called a piatto piano, which is destined for the second course (secondo), and a shallow bowl called a piatto fondo, which is for the primo, or first course, which is usually either a soup or a pasta dish.

When to add vodka to pasta sauce? ›

In a medium pot of salted boiling water, cook pasta until just shy of al dente, about 3 minutes less than the package directs. About 1 minute before you transfer pasta to sauce, add vodka to tomato sauce and bring to a gentle simmer over medium heat.

How long to cook pasta on the stove? ›

Spaghetti typically takes 8-10 minutes. Linguine is thicker and may take 10 or more minutes to cook. Fettuccine can also take 10 or more minutes. It's crucial to stir long noodles as they're cooking, to prevent the strands from all sticking together and creating a lump of pasta.

How many minutes should I cook homemade pasta? ›

One of fresh pasta's many virtues – besides taste and texture – is its extremely short cooking time. Fresh pasta – both filled and non-filled – almost never exceeds 4 minutes of actual cooking time. Its dried – and indubitably inferior – counterpart can, in many cases, exceed 15 minutes of cooking time.

Do you cook spaghetti on high or medium? ›

Fill a large saucepan with water and place over high heat. Be sure to use a big enough saucepan to allow the pasta plenty of room to cook properly.
